So by now you see that I REALLY like muffins. Well, healthy ones at least. I don't feel it's right to spend hundreds of calories on a muffin, no matter how good it is.
Why blueberry muffins? They're classic, rich in antioxidants, and .... there was a sale on blueberries at Sprouts. Had to find some use for all the berries I bought! And what a great use it was.
These muffins are a little on the breadier side and not super sweet - because they aren't filled with tons of sugar. However, that doesn't mean they aren't still delicious!

Chocolate Banana Oat Muffins
Muffins are one of my all-time favorite baked goods. As long as you have a good base recipes, you can add whatever you like to them and they'll almost always turn out delicious and beautiful. Some people say muffins are just ugly cupcakes, and sometimes they can end up that way. This recipe has all the yumminess of one of those "cupcake-muffins" without the guilt. Low-fat, whole-grain, and fiber-rich - what's not to love?
